Buttermilk Powder Cinnamon Roll Recipe
Ingredients:
Dough:
2 ¼ cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
1¼ ounce package instant yeast
¼ cup buttermilk powder
1 tablespoon sugar
¾ cup hot water
¼ cup vegetable oil
2 tablespoons of hot water after above if too dry. 1 TBS at a time to get consistency
Filling:
4 tablespoons butter nearly melted
½ cup brown sugar
1 teaspoon ground cinnamon
Directions:
Heat oven to 200°, then turn off as soon as it’s preheated. This is just to warm it enough to place the dough in once ready, to speed up the rising process. Do not leave oven on!
In the bowl of a stand mixer, combine the flour, salt, baking soda, rapid rise yeast, buttermilk powder and sugar. Mix on low.
Add ¾ cup very hot tap water and the oil and mix on low. At this point dough should still be a little dry, so add 2 TBSP more hot water.
Using the dough hook still, let the mixer knead the dough for about 7 minutes or until smooth and elastic. Set a timer.
Take dough off hook and scape from bottom of mixing bowl any excess stuck there, form into ball. Place back in mixing bowl & cover w/a towel. Put bowl in warm oven for 30 mins.
Meanwhile, stir together butter, brown sugar and cInnamon in smaller bowl.
On a pastry mat (or a lightly floured surface, like a large cutting board), roll the dough into a rectangle about 9×14. Note: If you are using a pastry mat, you may not need any extra flour because the dough is so pliable and easy to work with. So use flour only if needed.
Spread the brown sugar mixture over the rectangle of dough evenly and to edges. Starting with a short side, roll into a cylinder.
Slice into 8 pieces (cut in half first, then into 4 pieces from each half, easier to get consistency in size). Place on generously buttered parchment cut to fit 9 inch round glass pie dish, parchment going up sides. Rub tops of rolls with cinnamon butter mixture to cover dough, so it won’t stick to foil or plastic.
Cover loosely with a piece of foil or plastic wrap, and let rise for about 30 minutes in warm oven again. Then remove from oven.
Preheat oven to 375 degrees F.
Bake in preheated oven for 22-25 minutes or until golden brown.
Remove from oven and let cool slightly. Serve as is, or top with icing of choice.
Try with cream cheese/greek yogurt/maple syrup/vanilla icing🧁
Go with more cream cheese than Greek Yogurt, or it may be too tangy.
